Tropical Treat Jam
You need about 3 passionfruit !
| 5 large apples (1 kg) |
3 med pears (500g) |
| 3 med bananas(500g), chopped |
1 small pineapple, chopped |
| ½ cup of lemon juice |
11/3 cups orange juice |
| 6 cups (1½ kg ) sugar |
¼ cup passionfruit pulp |
Peel,
core and chop apples and pears. Tie apple and pear cores and skins in apiece of
muslin.
Combine the apples, pears, bananas
and pineapple, juices and the muslin bag in a large saucepan. Bring to the boil,
and simmer, covered, for about 20 minutes or until the fruit is soft. Discard
the muslin bag.
Add the sugar, and stir over a low
heat, without boiling, until all the sugar is dissolved. Bring to the boil, and
boil , uncovered, without stirring, for about 1 hour, or until the jam jells
when tested. Stir in the passionfruit and stand for 5 minutes, before pouring
into hot sterilized jars. Seal when cold.
Makes about 8 cups
