Spiced
Vegetable Pickles
| 2 500g (1lb) cucumbers, peeled |
500g (1lb) cauliflower, chopped |
| 6 med spring onions, chopped |
1 med red pepper , chopped |
| 250g (½lb) green beans, chopped |
2 tablespoons coarse salt |
Spiced
Vinegar
| 1½litres (6cups) white vinegar |
¼ cup sugar |
| 1 tablespoon black peppercorns |
2cm piece of ginger, peeled, sliced |
| 5 small red chillies, halved |
3 bay leaves |
| 2 cloves garlic, chopped |

Cut the cucumbers in half
lengthways, remove the seeds and chop the cucumbers coarsely. Combine the
cucumbers, cauliflower, onions beans and black pepper in a large bowl. Sprinkle
with salt and cover with boiling water. Let stand for 10 minutes. Drain.
Pack vegetables in sterilized jars and cover completely with
spiced vinegar. Seal.
Spiced Vinegar :
Combine the vinegar and sugar in a saucepan, stir over a low
heat , without boiling, until all the sugar has dissolved. Tie the spices in a
muslin bag, add to the pan, and bring to the boil. Cool and discard the muslin
bag.
