Chinese Shallots
This is another simple recipe, but also great and totally
different !
| 1.4 kg ( 3 lbs. ) shallots |
1 dried red chilli |
| 3 slices fresh ginger |
570 ml (1 pint) Soy sauce |
Place the shallots ( small onions ) in a
non metallic bowl and pour boiling water over them. Leave for two minutes. Drain
the shallots then trim and peel them. Pack into a clean, dry, sterilized jar or
jars, with the chilli and ginger. Pour in the Soy sauce to cover completely.
Cover and seal. Place in a cool, dry, dark place for about a 4 to 6 months
before eating.
Makes about 1.4 kg ( 3 lbs )
