Pickles
| ½ medium, 1 kg ( 2 lb.) cauliflower, chopped |
2 teaspoons coarse cooking salt |
| 1 large 400 g ( 1lb.) cucumber, chopped |
1 medium green pepper, chopped |
| 1 medium red pepper, chopped |

Vinegar :
| 2 cups white vinegar |
2 teaspoons coarse cooking salt |
| 8 black peppercorns |
1 bay leaf |
Place cauliflower
into colander, sprinkle with a teaspoon of the salt, cover and stand the cauliflower
overnight.
Add the cucumber
and the remaining salt. Stand for one hour, rinse under cold water and drain.
Add the vegetables
to a large saucepan of boiling water. Boil 5 minutes or until just tender. Rinse the
vegetables under cold water, drain and cool. Pack the vegetables into a large sterilized
jar, cover completely with vinegar and seal.
Vinegar: Combine all the vinegar
ingredients in the saucepan , bring to the boil, simmer, uncovered, for 5 minutes, strain
and use.
