Quince Jam
| 1 Kg Quinces |
Rind and juice of 1 Lemon |
| 1 litre of water |
1 Kg Sugar |
Time : Approximately 1 1/2 Hours Temperature
: Low to Moderate
Method : Peel the Quinces, then core and slice them. Put
into a pan with the water, lemon rind and juice. Cook very slowly until tender.
Add the sugar, stirring until dissolved, then bring to the boil again. Boil
rapidly for about 10 to 15 minutes. Test for setting. When ready pot and seal.
Makes about 6 cups
