Marmalade Recipes

  Marmalades are jams which always include a citrus fruit and usually have rind suspended in the mixture. Citrus fruits are rich in pectin, so there is rarely any trouble getting these jams to set. 

Peach Marmalade

1 med orange 1 lemon
¼ cup of water 3 lbs (1.4 kg) peaches
1 box MCP powdered fruit pectin 5 cups sugar

    Cut the orange and lemon into quarters, and remove the seeds. Then take the quarters and either slice them in ¼ inch slices or paper thin, whichever suits you.
    Combine the citrus fruit and water. Cover, and simmer for 20 minutes.
    Peel, pit and chop, or grind the peaches.
    Place all the fruit in a large saucepan. Bring the mixture to a full rolling boil. Stir in the sugar until it is dissolved and then  again bring to a full rolling boil. Boil hard, uncovered for 1 full minute.
    Remove from the heat and quickly skim off the foam. Pour or ladle into hot, pre sterilized jars, leaving a ¼ inch headspace. Adjust the lids.
    Process in a hot water bath for 15 minutes for half pint jars.

Makes 7 or 8 half pint jars.
