Peach "Honey" Jam

Peaches, ripe Light brown sugar

               

                Peel Peaches, using the boiling water method (- drop each peach into a  bowl with boiling water for a few seconds and peel off the skin), remove the pips, and mash them. For every cup of peach pulp, add one cup of light brown sugar.
                Place the peach pulp and sugar in a saucepan over a low heat and stir until all the sugar is dissolved and the peaches have released some of their juice. Bring to the boil and then simmer, stirring continuously to prevent burning, for about 30 minutes or until the mixture is thick and clear.
                Seal in hot pre - sterilized jars.
