Nectarine Jam
| 1½ Kg firm, ripe, nectarines |
Juice and rind of 2 lemons |
| 1 cup water |
6 cups sugar, warmed |
Wash fruit and drain well.
Halve, remove the stones and cut into thin slices. Tie the stones in a muslin
bag.
Place the fruit, stones, lemon
juice, rind and water in a saucepan. Bring to the boil and simmer until the
fruit is soft. Stir in the sugar, keeping the temperature low until all the
sugar is dissolved. Increase the temperature, stirring continuously, (as the
mixture has a tendency to stick to the saucepan) until the setting point
has been reached.
Remove from the heat and let
stand for 5 minutes. Pour into hot, sterilized jars and seal immediately.
Makes 5 cups.
