Pickled Baby Mushrooms
| 1 litre ( 4 cups ) white vinegar |
2 bay leaves |
| 2 teaspoons black peppercorns |
50 mm ( 2 inch ) piece of ginger, peeled |
| 1 nutmeg |
1 ¼ kg ( 3 lbs.) baby mushrooms |
Combine
vinegar, bay leaves, peppercorns, ginger and nutmeg in a large saucepan. Bring to the
boil, and simmer, uncovered, for 15 minutes. Strain.
Combine
vinegar mixture and mushrooms in a large saucepan, bring to the boil, and simmer, covered,
for about 1 hour or until mushrooms are tender. Pour into hot sterilized jars and seal when
cold.
