Melon and
Peach Conserve
| 1 large Rock melon ( 5 cups, diced ) |
7 large peaches ( 5 cups, diced ) |
| 3 oranges |
¾ cup of orange juice |
| 5 cups sugar |
½ cup of lemon juice |
Peel and finely chop the rock melon. Peel, stone and dice the peaches. Peel and
finely chop the oranges. Place the melon, peaches and the oranges in a
large bowl. Pour over the orange juice and sugar, and leave to stand overnight.
Place
in a large saucepan and cook uncovered for about 30 minutes or until the
conserve begins to thicken. Stir in the lemon juice and continue cooking for a
further 20 - 30 minutes or until thee mixture is thick.
Remove from the heat and allow to stand for 3 minutes. Pour into hot sterilized
jars, and seal.
Makes about 5 cups.
