Melon and Peach Conserve

1 large Rock melon ( 5 cups, diced ) 7 large peaches ( 5 cups, diced )
3 oranges ¾ cup of orange juice
5 cups sugar ½ cup of lemon juice

    Peel and finely chop the rock melon. Peel, stone and dice the peaches. Peel and finely chop the oranges. Place the melon, peaches and the oranges in a large bowl. Pour over the orange juice and sugar, and leave to stand overnight.

    Place in a large saucepan and cook uncovered for about 30 minutes or until the conserve begins to thicken. Stir in the lemon juice and continue cooking for a further 20 - 30 minutes or until thee mixture is thick.

    Remove from the heat and allow to stand for 3 minutes. Pour into hot sterilized jars, and seal. 

Makes about 5 cups.
