Crystallized Fruit Recipes

                Konfyt is a preserve made in South Africa and should not be confused with bottled fruit and jams. It is a term applied to fruits impregnated with a thick syrup.

                Fruits for preserving can be ripe or under ripe, but they should be well swollen and not hollow. This is particularly important in the case of green figs.

                Please read these "important tips for making Konfyt" before you start as they will be invaluable.
