Greengage Jam (Yellow

½ Litre of Water |

2 Kg Sugar |

Time : Approximately 45 minutes to 1 hour Temperature :
Low to Moderate
Method : Wash the Greengages and cut in half to remove the
stones. Split stones and remove the kernels. Put them with the fruit into a pan
with the water. Bring to the boil, and simmer until the Greengages are tender.
This should take about 40 minutes. Add the sugar, stirring until dissolved, and
bring again to the boil. Boil rapidly for about 15 minutes, then test for
setting. Pot and cover as usual.
