Gooseberry Jam

1 ½ Kgs of Gooseberries |
½ Litre of Water |

1 ½ Kgs of Sugar |

Time : Approximately 45 minutes Temperature : Low to
Moderate
Note : Gooseberries should be just under ripe.
Method : Top and tail the fruit and rinse well. Put into the
pan with the water and bring very slowly to the boil. Mash the fruit as it
softens. Cook the fruit until it is quite pulpy.
Add the sugar and stir until it is dissolved. Continue to boil rapidly
for about 15 minutes. Test for setting. When it sets, pot and cover as usual.
Makes about 4 cups
