Ginger - Fig Jam

5 cups crushed figs |
6 cups sugar |

1 cup orange juice |
1 tsp grated fresh ginger |
Combine the figs, sugar, orange juice and grated fresh ginger in a large
saucepan and heat gently until all the sugar is dissolved. Bring to the boil and then lower the heat to medium and simmer, stirring frequently until the mixture is thick - 30 to 35 minutes.
Pour immediately into hot, pre - sterilized jars, leaving a ½ inch
headspace. If required, adjust the caps and process in a boiling water bath for 15 minutes.
Makes about 5 pints/ 2½ litres.
