Gherkins in Spiced
Vinegar
| 1 ½ litres water |
¾ cup coarse cooking salt |
| 2 kg gherkin cucumbers |

Spiced Vinegar
| 1 litre ( 4 cups ) white vinegar |
2 ¼ cups sugar |
| 2 cinnamon sticks |
2 teaspoons black peppercorns |
| 2 teaspoons cloves |

Combine
water and salt in a large saucepan and stir over a low heat until the salt is dissolved.
Cool. Wash gherkins well, place in a large bowl, and cover completely with salt water,
cover, and let stand for 48 hours.
Drain
gherkins, and rinse under cold water. Pack gherkins in a large sterilized jar, and cover
completely with spiced vinegar. Seal.
Spiced
Vinegar:
Combine all the ingredients in a saucepan, and stir over the heat, without
boiling, until all the sugar is dissolved. Bring to the boil, and simmer the mixture for
about two minutes, stand 5 minutes, strain and cool.
