Refrigerator Pickles
| 2 lbs( 1kg ) cucumber, small |
½ onion sliced |
| 2/3 cup sugar |
2/3 cup vinegar |
| 6 tsp salt |
2½ tbsp celery seed |
| 2½ tbsp mustard seed |
¼ tsp turmeric |
Slice cucumbers and onion and place in a large jar. Mix
the remaining ingredients well an pour the mixture over the cucumbers. Screw the
lid on and place in the refrigerator. Let stand for 5 days before tasting. Will
keep for a year in the refrigerator.
Makes about 4 cups
