Dill Pickled Gherkins
There are many pickles that you can make with no cooking or at
least a bare minimum of cooking. I will give you one simple one here. It is an
excellent recipe.
| 1kg ( 2½ lbs ) small, firm gherkins |
325g ( 11 oz ) sea salt |
| 700ml ( 1¼ pints ) vinegar of your
choice |
2 tsp dill seeds |
| 100g ( 3½ oz ) small onions |
2 garlic cloves, sliced |
Place the gherkins in a non - metallic bowl, just cover
with water and sprinkle over the salt, stir to dissolve, and leave in a cool
place for 24 hours. Drain, rinse and dry well on paper towels. Pack the
gherkins, dill, onions and garlic into sterilized jars, and pour over the
vinegar to cover. Swivel the jars to expel any air. Cover with vinegar proof
lids and seal. Store in a cool, dark, dry place for at least 2 months before
using.
