Damson Jam
1 ½ Kg Damsons |
½ litre of Water |
1 ½ Kg of sugar |

Time : Approximately 45 minutes Temperature : Low to Moderate
Wash the fruit. Put it in the water and bring to the boil. Simmer until
the fruit is cooked. Add the sugar and stir until it dissolved. Boil quickly. Remove the
Damson stones as they rise. Test for setting. Pot and cover.
Makes about 6 cups
