Celery Pickles
| 25, 150 mm ( 6 in ), cucumbers |
1 litre ( 1 quart ) vinegar |
| 1 litre ( 1 quart ) water |
2 cups sugar |
| ½ cup salt |
1 bunch of English celery |
| 2 medium onions, sliced |

Cut the
cucumbers in quarters, lengthwise. Cut the celery the same length as the cucumbers. Pack
thee cucumbers into sterilized jars with celery alternately, with slices of onion on top.
Boil the vinegar, water, sugar and salt until clear. Pour hot, into hot sterilized jars
and seal.
