Blackberry Jam
| ½ teaspoonful Tartaric Acid |
1 Kg Blackberries |
| 1 Kg sugar |

Time : Approximately 45 minutes Temperature : Low to Moderate
Dissolve the acid in cup of water. Select only the firmest
Blackberries for Jam making. Pick them over and wash well.
Pour the dissolved Tartaric acid into a preserving pan and add the fruit. Simmer gently
until the fruit is cooked, stirring frequently.
Add the sugar and and stir until dissolved. Bring to the boil again and boil briskly for
about 10 to 15 minutes. Test for setting.
Pour into jars and cover when cold.
Makes about 6 cups
