Jam Recipes

Banana Jam 2

12 cups sliced bananas 6 cups sugar
1 cups orange juice 2 cinnamon sticks
6 whole cloves zest of 1 lemon
zest of 1 orange  

Note : The zest of an orange or lemon is the thin layer of yellow in the case of a lemon, and the thin layer of orange in an orange. This is best removed with a "zester" or a small grater. Take care not to go too deep as the white pith underneath is very bitter.

In a large heavy bottomed saucepan, combine all the ingredients. Heat the mixture slowly until all the sugar is dissolved. Raise the heat and boil rapidly for 10 minutes. Reduce the heat and simmer, stirring continuously for 15 minutes, or until the mixture is thick. Remove from the heat and ladle into hot, pre - sterilized jars and seal. If a longer shelf life is required, process in a boiling water bath for 10 minutes. Store in a cool dark place when cold.

Makes about 2 litres/5 pints.
