Chop the apricots into small sections. Place the apricots and raisins into a bowl and pour boiling water over them to cover. Leave to stand overnight.
If you do not want to wait that long, microwave them until the water boils - remove and let stand until cool. Pit and chop the dates.
Place all the ingredients in a saucepan with the water from the soaking apricots and raisins and heat slowly, stirring until all the sugar is dissolved. Bring to the boil, stirring continuously, and boil until
the setting point is reached.
Ladle into hot, pre - sterilized jars and seal. If you prefer, you can process in a boiling water bath for 10 minutes. Store in a cool dark place for up to 12 months.
