Apricot and
Ginger Jam

- Ingredients

ripe apricots (halved)

500 g sugar for each kg of apricots

1/2 tbsp fresh grated ginger for each kg of apricots
- Method

Prepare apricots as described above (MJL).
Bring fruit and sugar to a full boil, then add grated ginger. Simmer for 60
to 90 minutes, stirring occasionally until setting point is reached. Ladle into hot, pre - sterilized jars and seal. Process for 10 minutes in a hot water bath if required.
