Sauternes : A delicate, sweet white wine, produced in Sauternes, a commune in South - West France.
Ketchup : This word comes from the Far East, and traditionally was applied to thin, salty sauces. After cooking in a spiced vinegar, the vegetables or fruit are sieved or pureed, then simmered to a creamy consistency.
Cointreau : This is an orange liqueur
Passionfruit : The pulp from the inside of the granadilla.
Choko
: To the un - initiated, the often called chayote,
(pronounced chow-chow) is a popular gourd in all sorts of regions of the world
and can be found in just about any ethnic supermarket, be it Chinese, African,
Indian or Caribbean. In each it is known by a different name, cristophine being
the Caribbean term, but choko, shu-shu and chinchayote are among its many other
names used elsewhere. Unlike most gourds, it originated in Mexico but was widely
grown throughout the tropics after the invasions of the Spanish.
It is a pear-shaped fruit with a large central stone and has a cream colored or
green skin. It has a bland flavor, similar to a marrow, and slightly firmer
texture, something like a pumpkin. It is commonly used in Caribbean cooking,
primarily as a side dish or in soufflés. Alternatively it can be used raw in
salads.
Quatre - Epices : French 4 spice blend
5 tsp black peppercorns
2 tsp grated nutmeg
1 tsp ground cloves
1 tsp ground ginger
Sometimes cinnamon or allspice are used.Mix all the ingredients and place in an airtight container. Will keep for 3-4 months.
