Chicken Curry Ingredients:

1 coconut, grated
1 1/2 c. warm water
2 tbsps. cooking oil
1 clove garlic, minced
1/2 c. onion, minced
1 chicken (about 1 k.) cut up
1-2 tbsps. curry powder
1 tbsp. chili powder
1 tsp. salt
1 tsp. msg
1/4 c. tomato sauce

Add 1/2 cup warm water to the grated coconut. Place in cheese cloth and squeese to get one cup of thick coconut milk. Set aside. Repeat using 1 cup of warm water. Set aside. saute garlic and onion in a cooking oil. Drop in chicken pieces, cook covered for 5 minuted. Measure curry powder, chile powder, salt and msg. Pour in thick coconut milk and tomato sauce. simmer gently, stirring frequently until chicken is tender. A second cuup of coconut milk may be added if needed. Dish should not be too dry. Serve with hot rice and accompaniments. accompaniments are mango chutney, french onion rings, fried eggplant, chopped peanuts, crisp fried bacon chips and raisins.
