Baked Corned Beef Brisket Ingredients:

  • 1 pack of corned beef (found in meat section, not canned corned beef)
  • 1/4 cup honey
  • 1/4 cup pineapple juice Sliced pineapple (optional)
  • Cherries (optional)

Discard the pack of spices/herbs, if any, from the package. Place corned beef in slow cooker in the highest setting and include as much of the liquid as you can get from the package Cook for about 4 hours or until tender (there's no need to add liquid as it will make its own liquid that you would discard before baking) Mix together the juice and honey for basting. Discard the broth and transfer the cooked corned beef, fat side up, in a baking pan sprayed with Pam to prevent sticking Brush with honey mixture and cover with foil to prevent drying. Bake in a 325 deg. oven for about 30 minutes -- basting every 15 min. Remove foil and bake 15 minutes more. Slice and transfer to a platter. Garnish with pineapple slices and cherries if desired.
