Sauteed Chicken and Chives Ingredients:

1 lb. chicken
2 tablespoons mirin
1 bunch chives
1/4 teaspoon red pepper
2 tablespoons oil
1 teaspoon sesame seed oil
3 tablespoons soy sauce


Bone the chicken and cut into cubes. Cut the chives into 1 1/2-inch lengths. Heat the oil in a frying pan and when hot add the chicken, sauteeing quickly. Add the chives and continue to cook over a hot fire for a further minute. Add the seasonings of soy sauce, mirin, and red pepper, and cook For two minutes longer. Add the sesame seed oil, cook for a minute, turn out on a platter and serve immediately.
