Breast Of Chicken With Asparagus Inredients:

2 large chicken breast or 1 chicken,
boiled debones and cut into large squares
1/4 k. cooked ham, cut into large squares
10-12 pcs. asparagus, cut in half

Sauce:
1/2 cup butter or margarine
1 medium onion, chopped
1/2 cup all purpose flour
3/4-1 c. chicken broth water from asparagus
2 egg yolk
1 tbsps. prepared mustard
3/4 c. evaporated milk grated rind of lemon
1 tsp. maggi seasoning
1 tsp. salt
1 tsp. msg
1/3 c. grated cheese


Saute onion in butter. Sift in the flour and blend well. Add the chicken broth stirring carefully after each addition. Add the water from the asparagus and mustard. Blend together egg yolks, evaporated milk. lemon juice and rind. Add to sauce. Season with maggi, salt and msg. Cool. In a pyrex dish, put a layer of cooked chicken , then asparagus, then the ham. Top with sauce. Repeat, ending with sauce. Sprinkle with grated cheese. Broil until cheese is melted. Serve hot.
