Mountaineers Pea Soup

3 cups Dried Peas
1 Onion, chopped into small pieces
1 cup diced Ham
2 tsp Salt
2 tsp Pepper
1/2 cup Salt Pock, diced small
1/4 cup Maple Sugar

Soak peas over night. Place in pot and add water to cover. Add all other ingredients. Biol gently for about three hours; simmer an additional 30 minutes
