Scalloped Cabbage Casserole

This is liked even by non Cabbage eaters, we have tested it on some that say they would never touch the stuff and they come back for seconds.

Small Head of Cabbage (chopped up)
1 tube of Ritz Crackers (crumbled)
Cheese Sauce (recipe follows)

Pre heat oven to 350. Boil cabbage till it is tender. While cabbage is cooking, make cheese sauce.
Place a layer of cabbage in the bottom of a lightly oiled oven proof, 3 quart (or larger) casserole dish. Top with a layer of crumbled Ritz crackers and repeat layers saving some cracker crumbs for the top. Pour cheese Sauce over the top and then top with remaining cracker crumbs. Bake in a 350 oven for 40 to 45 minutes or until browned a bit on the top.


Cheese Sauce

1 Tbls. Butter or Oleo
tsp. Salt
1/8 tsp. Pepper
1 cup Milk
1/3 lb. Velveta Cheese (cubed)

Melt butter or oleo in sauce pan, add flour, salt, and pepper. Blend throughly. Add milk all at once and cook over medium heat, stirring constantly until thickened. Add the cubed cheese and stir till all cheese is melted. Set aside.
